Merita’s Taco Salad
Makes 6 servings
 

1 pound ground turkey breast or sirloin
1 large head (or green leaf) lettuce, shredded
½ pound reduced-fat Cheddar cheese, grated
2 cups cooked*, drained red kidney beans or one 16-oz. Can, drained
2 cups cook*, drained garbanzo beans or one 16-oz. Can, drained
3 (to 6) cups tortilla chips
6 tablespoons zesty reduced-calorie Italian salad dressing

Brown meat and season to taste.  Let simmer for about 15 minutes.  Drain off excess fat.  Combine meat and remaining ingredients in large bowl, toss and serve.

*For best results, soak and cook beans according to preferred method found on this site.

Chef’s tip: For extra color and flavor, add coarsely chopped green bell peppers.
