Vegetarian Bean Tacos
Makes 6 tacos
 

6 corn tortillas for taco shells
1 package (about 1 ½ oz.) taco seasoning
2 cups cooked*, drained pink beans or one 16-oz. Can, drained
¾ cup shredded reduced-fat Cheddar or Monterey Jack cheese
1 cup shredded lettuce
1 medium tomato, chopped

 Hang corn tortillas on oven racks and bake at 350º F for 7-10 minutes to create taco shells, being careful to watch them to prevent burning.  Prepare taco seasoning mix according to package directions, omitting beef.  Stir in beans; mash slightly.  Simmer according to package directions; stir frequently.  Spoon into taco shells; top with cheese, lettuce and tomato.

*For best results, soak and cook beans according to preferred method found on this site.
